Améthyste is one of the two red cuvées produced by Domaine des Ardoisières. This wine derives its name from a variety of violet quartz, a colour that you can find on the label and the wax seal of the bottle. The wine is a blend of 60% Persan and 40% Mondeuse Noire. The vines are planted on terraces with a beautiful southern exposure, where the slopes can be quite steep, reaching up to 60%! The soil is shallow, filled with schist and silt. The vines are pruned in the gobelet style on stakes style. Here, the principles of biodynamic farming are respected, and the harvest is, of course, done by hand, with an average yield of 25 hl/ha. In the cellar, vinification takes place using whole bunches to preserve the quality of the grapes. The fermentation is conducted using native yeasts specific to each parcel. Finally, the wine is aged for 18 months in oak barrels before being bottled.
