More infoThis cuvée was produced from organic vines that are around 65 years old. The wine making process is natural, without additives or additional yeast. The wine macerates for 18 days, after which it is pressed and blended in the tank, and then transferred to casks or demi-muids (600-litre vats) to finish fermenting through the winter. The wine is only bottled after Easter. The cuvée is neither fined nor filtered, and only a small quantity of sulphur dioxide is used during the bottling process to prevent any degradation during transport.
The translucent garnet colour of this wine is fairly light for a Morgon. The nose is not overpowering, evoking sweet cherry liqueur, flowery pot-pourri, and soft spice. The palate is sweet, full-bodied and airy. It flaunts aromas of berry jam, dried flowers, incense and leather, all brought together with a surprising crispness and a remarkable balance. The finish is pleasantly persistent and prolongs the elegance on the palate. It is enhanced by a delicate mouthfeel and a steady bitterness, atop notes of preserved cherries, soft spice and orange peel.
This wine pairs perfectly with all types of poultry and meats cooked in sauce, as well as cheese such as goats’ cheese and Brie.

The wine

About the Producer Dominique Piron
Domaine Piron can be found at the foot of the Côte de Py. It is run by the expert hand of Dominique Piron, aged 66, who has proved a worthy heir to 14 generations worth of wine making savoir-faire. In 1988 he became the first in Beaujolais to buy grapes rather than grow them himself, injecting a pioneering spirit into the region. He oversees some 80 hectacres in 16 different communes in Beaujolais but he is based principally in the symbolic Morgon appellation as well as the Chénas, the smallest appellation in Beaujolais. Despite the breadth of Piron’s domain, his wines are always in harmony with one another. He continues to produce reliable wines, vinified in a way that places emphasis on tradition and origin. In addition to the winegrowing, Piron is also involved in negociant activity. In July 2017 he became President of the board of Inter-Beaujolais U.I.V.B. for which he has big ambitions! Piron’s main area of focus is on the quailty of wines in the Beaujolais and the steps needed to protect the environment.
