The wine
The Saint-Aubin 1er Cru Clos du Meix stems from a 2.5-hectare parcel with limestone and marl soils. This terroir that imparts complex aromas and beautiful minerality to the Chardonnay. After hand-harvesting, ensuring a rigorous grape selection, vinification begins with a gentle pressing, followed by fermentation in oak barrels, 20 to 30% of which are new, for 12 months. This process lends the wine subtle notes of vanilla and hazelnut. Ageing continues on fine lees with regular stirring, enhancing the wine’s texture and aromatic complexity.
This nectar reveals aromas of white-fleshed fruit notes, pear and apple, combined with floral notes and hints of hazelnut. On the palate, it is fresh and lively, with balanced acidity and a remarkable length, typical of great Burgundy wines. Its minerality and elegance make it a perfect match for seafood, grilled fish, or creamy poultry dishes.
About the Producer Marc Colin
Of the many Colins in Burgundy, Domaine Marc Colin is perhaps the most famous. This Saint-Aubin estate asserted its reputation thanks to its high-flying whites. The winery has an impressive collection of terroirs in Chassagne, Puligny and several works of the mythical Montrachet. It is now his children, Caroline and Damien, who are at the head of the estate but they remain loyal to the property's identity. The quest for precision and accuracy is impressive, whether in the vineyard, during vinification or in the élevage. The red wines are also of a very high quality. A location which is not-to-be-missed in the Côte de Beaune.
