The wine

Entirely produced from Chardonnay, this cuvée is lovingly crafted in the Burgundy region, where France’s finest wines rub shoulders. François de Nicolaÿ stands out from the crowd, however, for his winemaking methods, devoted to a deep understanding of his environment. Based in Savigny-lès-Beaune, he strives to produce absolutely pure, unadulterated wines made solely from grapes. This particularity reflects the winemaker’s desire to express his terroir in the most natural possible way, preserving all its original freshness.
The vines spring from clay and limestone soils, delivering a fine acidity on the palate. The juices are matured in barrels in the cellar for 14 months. They are neither filtered nor pumped before bottling, a process that is carried out by hand, with no prior addition of sulphur.
Golden with beautiful hints of green, the wine’s colour reveals the winegrower’s affection for his natural surroundings. The nose is particularly floral, with acacia, hawthorn and honeysuckle composing a rich aromatic bouquet. Soft and full, long and flavoursome on the palate … the perfect accompaniment to tender fleshed fish.

About the Producer François de Nicolaÿ

Having lived in Paris for a few years, François de Nicolaÿ, chose to take over the running of the family domain in Savigny-lès-Beaune (Chandon de Briailles) in the early 2000s. Alongside this prestigious estate, he decided to start his own wine trading business under his own name – François de Nicolaÿ.
For these wines, he uses grapes that are certified organic or biodynamic so that he can show off their full characteristics and the terroirs where they grow. Vinification and ageing are conducted naturally without any additives (some wines are natural while others have a bit of sugar added to them) in an old cellar in Savigny-Lès-Beaune. There is no pumping over or punching down, neither is the wine filtered or clarified. Tasting these wines will leave you wanting more; they are delicious with an airy character. We also enjoy them for their purity.
As the business grows as does the range while the prices remain reasonable for the appellations.
