The wine
This delicious Sauternes comes from a property at the heart of the Barsac plain. A dominance of chalk in the soil allows for water to be retained, and this is particularly helpful during the summer months. The 18 hectares of land here are planted with Sémillon and Sauvignon, though only Sémillon is used in this cuvée due to its ability to develop noble rot, the natural phenomenon at the base of Bordeaux’ dessert wines. Only the grapes that have developed this rot are harvested, meaning that the vineyard is often passed through up to six times. The grapes are then fermented in oak casks with regular racking. There is then a nine-month maturation in stainless steel vats before bottling. Very enjoyable in its early years, the Sauternes from Château Cantegril is also capable of long ageing. It will develop a deep, golden hue as well as honey and saffron notes. In terms of food pairings, head for a classic foie gras, of course, otherwise it will be lovely with a white fish. This cuvée will only get better as the decades pass.
