In the winery, her philosophy is all about low-intervention winemaking to really let the terroir shine through. Alcoholic fermentation is triggered spontaneously by native yeasts, followed by ageing in large oak barrels (450–500 litres) with no new oak used — “so it smells of fruit,” as Clarisse told us.
The result is a supple, fruit-driven red, offering notes of red and black berries along with fine and well-integrated tannins. A versatile wine, ideal at the table with red or white meats.

About the Producer Clarisse De Suremain
Clarisse, a former professional pianist, returned to her native Burgundy after graduating from business school with a degree in management. She lovingly cultivates over one hectare of Pinot Noir and Chardonnay vines in the lower reaches of Pommard, and Aligoté in the lower Volnay area. Over time, the domain has grown, and the winemaker enthusiastically explores new terroirs, including in Chablis. The vineyard stands as one of the driving forces of Burgundy, invigorating the region through strong commitment. Embracing organic and biodynamic principles, the domain nurtures its vineyards and manages the cellar without any chemical additives. Clarisse inherited this natural, balanced philosophy from David Didon, a prominent figure at Château de Puligny, who passionately shared all the secrets and benefits of this viticultural method with her. As a result, the vineyard is the perfect embodiment of the emblematic identity of Burgundy wines.
