The wine shows a pale, bright yellow hue with a persistent bead. The nose is precise and finely etched, combining notes of candied lemon, damp chalk, green apple, elderflower and hazelnut. On the palate, it is lively and vibrant, with a clean, direct attack and a beautifully chalky minerality leading into a fresh, persistent finish.

About the Producer Chavost
Established in 1946, the domain is named after the village of Chavost, nestled between the church of Saint-Martin and Mont-Félix, topped by a sumptuous château. The first winemakers gathered their strengths to share their love of the land by producing quality wines. All the parcels are rooted in exceptional terroirs, comprising clay and limestone, and enjoy a north-facing exposure. Convinced of the benefits of organic practices for the land and the cuvées, the domain nurtures its five hectares of vines with great care and is currently in the process of converting to organic farming. Today, the wines are made and marketed by Fabian Daviaux. Following over a decade travelling around the world, he is back with new projects to vinify his unique Champagnes in his own style. Since 2019, he has been elaborating organic cuvées, with no added sulphites, which simply exude the love and pride Fabien has for his wines and his terroir.
