This single-varietal Pinot Noir Champagne originates from the Papillon parcel, which gives the cuvée its name, adjoining Fosse Grely. The noble grape variety draws nourishment from clay-limestone soils rich with red clay, and the grapes are harvested by hand with rigorous sorting to ensure pristine quality. Vinification follows a low-intervention philosophy, and fermentation start naturally with native yeasts. The estate uses winter frosts as a natural means of cold stabilisation. The wine is then bottled without fining, filtration, sulphur, or dosage.
