A bold, lively, and elegant vintage that expresses the very essence of the Grand Cru.
More infoLocated in the heart of Chablis, in what was once the old living quarters of the monks of the Pontigny Abbey, is now a small plot of about five thousand square metres, with full southern exposure in the valley of Vaudésir. Replanted by Romain and Damien Bouchard’s father in 1992, the Chardonnay vines flourish thanks to organic farming methods and thrive in the nutrient-rich soil. At the winery, every step of the process is done in the most natural way possible. The grapes are harvested by hand when fully ripe and are sorted and pressed before being placed in stainless-steel tanks in underground cellars, where spontaneous fermentation takes place.
This golden-coloured wine boasts a jovial bouquet of yellow fruits like apricot. The full-bodied, crisp palate leads to a persistent, slightly minty, finish. This cuvée is well-suited for a few years of cellaring.
