The wine
Born of the sun-kissed terroirs of Provence yet deliberately classified as Vin de France to preserve stylistic freedom, this white wine reflects the elegance and freshness of the south of France’s finest wines. The vines thrive on clay-limestone and schist soils, which impart minerality, tension and complexity. Harvesting is carried out by hand at full ripeness, and the grapes are gently pressed in the winery. Alcoholic fermentation starts naturally with native yeasts in stainless steel vats, followed by around eight months of ageing on fine lees.
In the glass, the hue is pale and bright. The nose offers a superb floral spectrum, interwoven with citrus, fennel and white fruit notes. The palate is lively and crisp, leading to a saline, persistent finish. This vibrant white wine pairs beautifully with fish in sauce and fresh desserts.
