The wine
The Côte de Beaune terroir plays a central role in the identity of this Chardonnay. Situated at around 320 metres in altitude, the Les Casse-Têtes parcel rests on clay-limestone soils rich in white stones, imparting minerality, tension and excellent ageing potential to the wine. The grapes are harvested by hand, then gently pressed. Fermentation follows with native yeasts, respecting the natural rhythm of the process. Ageing takes place in oak casks, with 15% new wood, for twelve months, followed by six months in stainless-steel vats to refine the wine and preserve aromatic purity.
The pale yellow hue is lifted by silvery highlights. An elegant nose reveals white blossoms and mineral touches. On the palate, a lively, saline attack opens onto a creamy texture, leading into a long, clean and persistent finish.
About the Producer Patrick Javillier
Domaine Patrick Javillier extends over 10 hectares in the Côte de Beaune. Originally from a family of wine growers in Meursault, Patrick Javillier studied enology before following in his father’s footsteps. Since 2008, he has been making wine with his daughter Marion. His wines present a rather classic style, but considerable elegance and good aging potential.
