The wine
Le Grapiot Blanc from Cellier Saint Benoit is a wine made entirely from Savignin grapes grown on a hectare-sized plot of land situated in Pupillin in the heart of the Jura. The vines are around thirty years old and are planted on calcareous marl that adds minerality and a remarkable structure to the wine. Harvesting by hand when the grapes have fully ripened ensures the very best of quality. The winemaking process is done in accordance with tradition, with fermentation in old, oak barrels being followed by ageing under a layer of yeast known as ‘sous-voile’ for a period of at least three years, as is the norm in this region. This allows the wine to develop aromas of nut, dried fruit, curry, and green apple.
On the nose, the wine first reveals an intense concentration reminiscent of brandy before gradually developing nuances of walnut wine. On the palate, it reveals a fantastic finesse with every quality finding its rightful place. The level of acidity is balanced whereas flavours are expressed with remarkable intensity.
