Wild yeasts ferment the juice in French oak barrels. The wine is then matured for 9 months in the same kind of container, with up to 43% new wood.
The domain aims for this wine to be both complex and elegant. They have achieved this with a pale cuvée that has an expressive aromatic bouquet of white peach, white flower, cashew nut, lemon zest and patisserie. On the palate we find the same notes through a silky texture lifted by a delicately saline persistence.
We recommend serving this cuvée with fish in a citrus sauce, or a summer salad of salmon, grapefruit, and avocado.
