Chablis Grand Cru Blanchot Raveneau (Domaine) 2008

The wine

On a plot of just 0.64 hectares facing south-south east to the Montée de Tonnerre, the Grand Cru Blanchot from Domaine Raveneau is produced. The vines are quite old and are spread out over famous prehistoric marl Kimmeridgian soil. While official organic status has not been certified, the brothers Bernard and Jean-Marie Raveneau have always taken the utmost care of their vines. Of course, the vines are hand-harvested the yields are very limited. It is indigenous yeast that causes the fermentation in this case. The wines are aged for 18 months in pièce barrels (228l) and Feuillet half barrels (132l).
The yellow colour of this Chablis turns into a deep gold after a few years. On the nose, there is a delicate but striking bouquet of white flower, honey, and peach. The elegant palate is marked by strong minerality and is perfectly balanced. To pair with food, opt for poultry or grilled fish.

About the Producer Raveneau

Led by traditional methods (manual harvesting and controlled yields), Domaine Raveneau is today one of the most sought-after names of the Chablis appellation. The vineyard covers 7.5 hectares, divided into five premier crus and three grands crus. Jean-Marie and Bernard Raveneau, the current owners, maintain the desire for perfection that has typified the maison since its origins: for example, they prefer to harvest early to ensure a good level of natural acidity, even to chaptalise rather than picking an over-matured fruit. In three generations, ownership has risen to a legendary rank: its worldwide reputation means that the wines are practically unobtainable, especially since the domaine no longer accepts new customers, all its harvest being reserved in advance. The fine wines are consistently harmonious, with superb minerality thanks to a honeyed touch due to élevage in wood. These wines are popular worldwide.
