Bourgogne La Combe Catherine et Dominique Derain 2022
The wine
This half-hectare parcel was planted in 1988 and lies just next to the village of Puligny-Montrachet, the preferred terroir for growing Chardonnay, on very deep soils of brown clay. The absence of limestone produces fat, rich and fleshy wines. The vines are farmed biodynamically, and yields are limited to 35 hectolitres/hectare. After manual harvests and gentle pressing of whole bunches, the juice ferments with ambient yeasts. Everything is done as naturally as possible, with no chemical inputs and sulphur only being used when absolutely necessary. On the nose, this wine offers aromas of white flowers and white and yellow fruits. In the mouth, there is a lovely balance between tension, fat and roundness; the finish is surprisingly long. This wine, which expresses itself in a rich, demonstrative manner, can be aged for two to five years. Think about opening this bottle for your next aperitif with friends!
About the Producer Catherine et Dominique Derain
Dominique Derain, the grandson of a vine-grower, and his wife Catherine manage a 5.5 hectare vineyard in Saint-Aubin. He is one of the pioneers of biodynamics in Burgundy - his domaine has been certified since the first harvest in 1989. His wines assert a strong personality, originality and a rare expression of his terroirs.
