The wine
The Pommard 1er Cru Fremiers stems from a 1.12-hectare vineyard nestled on well-drained limestone-clay soil, with a favourable southeast exposure. The vines, aged over 40 years, yield grapes of exceptional quality, which are hand-harvested to ensure meticulous selection. Vinification begins with a cold pre-fermentation maceration lasting several days, extracting both aromas and colour. The alcoholic fermentation takes place in open vats with native yeasts, alongside regular punching down and pumping over to optimise tannin extraction. The wine is then aged in French oak barrels for 15 to 18 months, with around 30% new wood, adding complexity and structure while allowing the fruit to shine.
On the nose, this elixir presents a complex bouquet of red and black fruits, such as cherry and blackberry, interlaced with spicy notes, undergrowth and occasionally truffle. On the palate, it is ample and well structured, with elegant, fine tannins balanced by a lively acidity, culminating in a long, persistent finish.
About the Producer Nicolas Rossignol
In common with many domains, the history of Nicolas Rossignol's property is a family affair. After travelling around South Africa and learning his craft in various regions (Joseph Voillot in Volnay, Louis Latour in the Ardèche, le Vieux Télégraphe in Châteauneuf-du-Pape, and La Cardonne in Bordeaux), Nicolas Rossignol established his own domaine in 1997 with 3 hectares of vines in the communes of Pernand-Vergelesses, Aloxe-Corton, Beaune, Pommard, and Volnay. In parallel he had been vinifying wine on the Rossignol-Jeanniard family domaine since 1994. You may recall that the two domaines merged in 2011 and retained the "Domaine Nicolas Rossignol" label. Over the years, the owner has continued to broaden his horizons, acquiring new land to supplement his domaine, which now spans some 17 hectares.
