Brut Premier Cru Pierre Gimonnet

The wine

Maison Pierre Gimonnet & Fils presents Cuis Premier Cru Brut, the house’s flagship cuvée. It is with this Premier Cru that the family’s story began.
This Champagne is made exclusively from Chardonnay grown in the village of Cuis, south of Épernay, between the villages of Aÿ and Avize. The vines thrive in classic Champagne soils, with a chalk bedrock complemented by limestone and clay. Here, Chardonnay expresses itself at its very best. In the vineyard, the family follows a sustainable approach to viticulture, limiting the use of herbicides and other chemical inputs. Selected parcels are planted with grass covers to encourage biodiversity between the rows.
In the winery, the ethos is very much the same. Following manual harvests, the grapes are gently pressed immediately on arrival. After cold settling, each parcel is vinified separately in stainless steel vats for six to eight months. The wine is bottled as a Brut, with a dosage that does not exceed 6 g/L.

The Gimonnet family have been wine growers since the middle of the 18th century, when they sold their grapes to the producers. The domain began making wine in 1935. Today it owns 28 hectares of Chardonnay vineyards in the Côte des Blancs, including some premier cru parcels. Single parcel selection gives every cuvée its own identity. In general, the champagnes are refined with a mineral quality. <
