Mâcon-Prissé En Chailloux Jules Desjourneys 2021

The Côte Chalonnaise appellation is located between the Côte de Beaune and Mâconnais and had long been nothing but a background character before experiencing a revival thanks to excited winemakers such as Desjourneys. The southeast-facing En Chailloux climat rests on stony soils mixed with marl and limestone, giving the wine a salty tension and great mineral energy. Once optimally ripe, the grapes are harvested by hand in little baskets and lightly pressed. Spontaneous fermentation takes place in oak barrels that have a small proportion of new wood. The wine then ages for an extended period of 18 months on fine lees without stirring, preserving freshness while adding depth and length.
This golden wine evokes aromas of white flowers, pear, a hint of wet chalk and delicate toasted notes on the nose. The attack on the palate is direct and chiselled, enhanced by a rich, salty heart and a wonderfully fresh citrus flavour, leading to a lingering finish.
