This Pinot Noir is produced from vines over 35 years old located on the Trouillots terroir, with soils composed of decalcification clays (Lias). The vines have been cultivated organically since 2014, and the grapes are harvested by hand.
The wine then undergoes maceration in whole bunches in stainless steel vats for 15 days. The alcoholic and malolactic fermentations are carried out in stainless steel vats and casks. This wine is unfiltered and contains no added sulphites.
Despite being unfiltered, this Pinot Noir displays a lovely clear violet colour, along with aromas of black fruit, strawberry and a hint of spice. Decant upon opening to allow the wine to open and breathe. It should be served at a temperature of 12° to 14 °C. It is the perfect partner for grilled meats, red meats and charcuterie.
