More infoComprising 70% Chardonnay and 30% Pinot Blanc, this wine draws on clay and silt soils with a high concentration of limestone, delivering fine acidity on the palate. These grape varieties are cultivated organically at ‘Les Vallerots’, in the commune of Magny-lès-Villers.
Fermented in barrels, this wine reveals its great subtlety at the ageing stage. Only 50–70% of juices are matured in new barrels and 30–50% in sandstone vats. This initial vatting lasts 15 months and is followed by a final vatting. After neck-down bottle piling, 6 months of vatting confers a beautiful maturity to the aromas. The final touch: no fining, a single racking and light filtration before bottling.
This meticulous process gives the wine a ripe, pleasant aromatic profile, with notes of nuts and white-fleshed fruit. A few years of ageing will bring out a delicious touch of beeswax. The acidity on the palate, revealing the wealth of the terroir, provides a more than welcome depth on the finish.

About the Producer Hoffmann-Jayer (anciennement Jayer-Gilles)
Domaine Jayer-Gilles, located in Magny les Villers in Hautes-Côtes-de-Nuits, has been managed since 1998 by Gilles Jayer-Gilles, who has been on the domaine since 1985. The vines come from the Gilles family (the current owner's mother) and following the marriage with Mr Jayer (the famous Henry Jayer's cousin), the domaine was named Gilles-Jayer before taking its current name Jayer-Gilles. Gilles represents the third generation of his family at the head of the family farm. The vineyard extends over 11 hectares mainly in the Hautes-Côtes. élevage takes place with a high proportion of new casks, in the manner of Henri Jayer who used 100% new wood. The imprint of the wood is never too marked thanks to an extremely judicious choice of barrels from the best coopers of France. Gilles Jayer is a particularly renowned winemaker in Burgundy, a truly great winemaker. His wines emanate a communal personality with very fruity aromas. The quality of the wines is consistent and offers great aging potential. With its very reasonable prices, it is undoubtedly one of the excellent signatures of the Côte de Nuits.
