If you haven't already tried it, this superb Languedoc Vin de France is a must! As this elegant wine evolves on the palate, generosity gives way to vivacity.

More info

This white Vin de France is rounded and elegant. A White Carignan varietal, produced from 70-year-old vines, the wine has aromas of fresh almond and, more astonishingly, fennel bulb. Its flavoursome palate evolves towards the vivacious and also has a slightly spicy quality. Brothers, Xavier and Mathieu, cultivate their vines on a terroir of clay and sand. Their methods are natural and involve ploughing the earth by horse and harvesting their grapes by hand. They then ferment the wine for three months before blending it in a vat.

About the Producer Legodar

Formerly known as Grand Lauze, Domaine Ledogar was taken over in 1998 by sons Xavier and Mathieu, eschewing the local co-operative in favour of an individual operation. Organic certification was obtained in 2009, but the Ledogars also try to embrace biodynamic principles. Lunar cycles are followed, ploughing is done by horses and donkeys, and in the summer time, "home-made compost" – made from cow dung and grape pomace – is spread. Two-thirds of the vineyards are planted with Carignan and Grenache, with vine ages between 60 and 120 years. A very promising domain for this young local Boutenac wine!
