More infoJérôme François took his grandfather’s few vines and his great-uncle’s barn as his inspiration to create a 100% Auxerrois cuvée offering an authentic and fragrant experience. The Auxerrois vines are exclusively cultivated according to organic farming principles. Once the grapes have reached peak ripeness, they are hand-picked and undergo a natural, low-intervention vinification process. After a direct pressing stage, the grapes ferment spontaneously in vats. The wine is then bottled without filtering, disgorging or added sulphur.
The intense yellow colour reveals an extremely fresh bouquet of citrus fruit, elderflower and subtle mineral notes. The lively, thirst-quenching palate is complemented by a fine and delicate effervescence culminating in an elegant and refreshing finish.

Jérôme François strives to highlight the rich variety of Alsatian grape varieties and the diversity of its soils.
