More infoMatthieu Goury organically cultivates a dozen hectares spread over around 40 parcles in the Combe de Savoie vineyard. For this Roussette de Savoie, the Altesse variety grows on steep marl-limestone layered hills in the city of Saint Pierre d’Albigny. In both the vineyard and the winery, the winemaker’s philosophy is to intervene as little as possible. This demands a lot of manual labour and strict disbudding, as well as meticulously pruning the vines according to the expertise of his partner who is a trained herbalist. At the winery, the grapes are pressed mechanically and the juice ferments using native yeast before maturing for one year in barrels and then another year in the bottle.
The result is a delicately balanced wine with aromas of white fruit, apricots and honey. The palate is full-bodied and lively, with a pleasant and subtle bitterness in the final notes. An elegant wine to be enjoyed within five years.
