An estate founded in the 17th century, Domaine de la Chevalerie produces this fruity and floral Cabernet Franc using biodynamic farming and low-intervention vinification.

A leading name in winemaking in Bourgueil, Domaine de la Chevalerie first came about almost 400 years ago. Today, the vineyard is made up of almost forty hectares of vines, which are farmed with a great deal of care and in accordance with the principles of organic and biodynamic agriculture. The Cabernet Franc vines used to produce this cuvée are encouraged to soak up the nutrients needed from the surrounding sand and clay soils in order to flower. The grapes are harvested by hand and are meticulously sorted before being destemmed. The wines are vinified using as little intervention as possible and this involves a delicate month-long maceration period. Fermentation is triggered by the indigenous yeasts and a small amount of sulphur is added at the end.
This wine is made to be enjoyed in its youth. The fruity profile of this single varietal cuvée gives it a ruby-red colour with purplish highlights, carrying both indulgent and delicate notes in the form of well-ripened red fruits and flowers, which creates a round structure of velvety tannins.


About the Producer Domaine de La Chevalerie

Domaine de la Chevalerie is a leading name in the Bourgueil appellation. The property lies in the commune of Restigné, directly beside Bourgueil, and has been owned by the Caslot family for 14 generations. It is currently run by Stéphanie and Emmanuel who took over the reins from their father Pierre. The 38 hectares of vineyard are certified organic and biodynamic. Winemaking is as low intervention and natural as possible, using indigenous yeasts during the gentle fermentation process, and keeping sulphites to a minimum. The wines are clean, deep, and very drinkable and cover the full spectrum from fruity, easy-drinking wines through to more complex and structured fine wines with good ageing potential.
