A Natural Chilean wine made from very old Pais vines, Latin America's oldest varietal.
More infoPisador is a cuvée made from very mature vines (around 120 years old) of Pais, Latin America’s oldest varietal. The vines are planted in red soil rich in granite and cultivated as naturally as possible. Fermentation is natural and spontaneous (using only wild yeasts) and the grapes macerate for around 23 days. Then, the wine is matured in 300-litre casks before a further year in the bottle. If sulphur is added, it is only in a small quantity (28mg/l total). In the glass, this is a wine that exudes aromas of black fruit, aromatic herbs, tobacco, and white pepper. On the palate the attack is gentle, the texture silky, and there is a freshness alongside smoky notes and a hint of chili pepper. It has a lingering finish. This wine will pair nicely with warming dishes like ragout.
