The wine
This cuvée owes its name to an old expression which translates literally as “eagerly, ardently”. It is naturally appropriate for this wine with its lip-smacking fleshy quality punctuated by an irresistible minerality. Refined and fruity with a hint of spice, it is the product of organic and biodynamic, natural winemaking. The Vermentino (Rolle) and Ugni Blanc grapes are harvested by hand before undergoing direct pressing and a brief maturation in vats. No sulphites are added and only indigenous yeasts are used. A delicate cuvée such as this should be paired with dishes of equally delicate flavours, such as fish or ceviche with citrus.
About the Producer Les Terres Promises
Jean Christophe Comor started producing his certified organic wines in 2004, following a herculean effort cutting down trees, clearing stumps and preparing the land for replanting vines! One-time parisien and professor at the prestigious Sciences Po university, his winemaking whim has well and truly paid off; now producing wines with a unique character, elegance and complexity and in a style which improves with each vintage. One to watch.
