The wine
The Chardonnay that makes up this cuvée comes from a premier cru characterised by a chalk-rich soil on pebbly land. Maison Joseph Drouhin opts for low yields of around 49 hl/ha to let the grape express the character of its terroir.
In the winery, the grapes are vinified with great care, a process that includes slow pressing. After clarification, the wine is moved to oak casks (25% new wood) for a year-long maturation.
We recommend keeping this bottle for a few years in the cellar; it will be at its best in 8 to 20 years’ time. It will then have a lovely, golden colour with a varied and refined bouquet. It carries pleasant notes of white flowers, hawthorn, almond, apricot, candied fruit, and nuts. The palate lingers on a balance of volume and freshness.
This wine will make for a wonderful pairing with poultry in creamy sauce, a cauliflower gratin, or citrus scallops.
About the Producer Joseph Drouhin
Founded in Beaune in 1880, the Joseph Drouhin house is now run by the four children of Robert Drouhin. Present throughout Burgundy, but also in the United States in Oregon, its reputation is worldwide. It also has a domain of its own, including a vineyard of 72 hectares.
