The wine
The Roussillon domain Ma Blanc has some of the most beautiful terroirs in the Banyuls appellation, establishing itself as an emblematic figure of the local vignoble since the 17th century. Run by the same family for several centuries, the property is now in the hands of Jean-Michel Parcé who is proud of the southern varietals used to craft his cuvées. The mutage method is used to make this wine, meaning that a 96% neutral alcohol is added to stop fermentation. The result is an intense, ruby-red wine with a breath-taking aromatic bouquet. It has notes of dried fruit, dark fruit (blackcurrant, black cherry), cacao, coffee, and gentle spices. The palate is striking in its generosity and sweet intensity perfectly balanced with a nice acidity. We recommend serving this intriguing cuvée at around 12°C with blue cheese and fruity bread or a chocolate dessert.
