The wine

The nose reveals iodine, mineral notes with hints of yellow fruit (apricot and bergamot). The palate is rich and saline, with considerable fruitiness! The wine owes this fact to its terroir of origin: a volcanic soil where the wine blows strongly, its soil strewn with pumice stones which release water during dry periods. This salinity is nothing less than the backbone of this incredibly pure, powerful wine.

About the Producer Hatzidakis

This organic domaine, founded by Haridimos Hatzidakis in 1996, is located on the island of Santorini. This unique terroir, with its volcanic soils whipped by strong winds, requires a special bush pruning technique reminiscent of bird’s nests. Particular attention is paid to the vines and this allows the various indigenous grape varieties grown on this domaine to express themselves fully.
