Neuchâtel Cortaillod Les Cailloutis Landions (Domaine des) 2016

The wine

Les Cailloutis is a single-varietal Swiss Pinot noir planted in the communes of Vaumarcus and Cortillod, at the heart of the Neufchâtel appellation. The yields are very limited. Grown using eco-friendly methods, the vines are pruned following the Guyot method and the grapes harvested by hand. In the winery, heat-controlled vats are used for fermentation; this lasts a month and is instigated only by indigenous yeasts. The wine is then matured for 18 months before being bottled without fining or filtering. In the glass we find the Pinot noir in all its splendour. A garnet red hue announces a classic aromatic bouquet of fruity (red fruit, plum) and lightly smoky notes. On the palate, we appreciate the crisp and flavourful profile. Its perfectly integrated tannin lingers, promising lovely gastronomic pairings.
