The wine
Brothers Jean-Baptiste and Benoît, now at the helm of the family estate, bring us a little rarity from the Côte de Beaune with this Chassagne-Montrachet red. The Pinot Noir grapes used to produce this wine flourish in an oceanic climate with semi-continental influences, and are encouraged to draw the nutrients they require from marl and limestone soils, by means of organic and biodynamic cultivation methods. These practices promote the vitality of the soil to optimise its microbial life. In the winery, the same approach to respecting the product and the terroir applies. The vinification process is meticulous and rigorous. The berries are gently pressed and the fermentation is triggered by the native yeasts. Aged in wood, the wine offers an ageing potential of up to ten years. In the glass, the ruby-red colour with purple tints reveals notes of red and black fruit, musk and sweet spices. The silky tannins are perfect for pairing with regional cheeses or meats with sauce.
