The wine
This bottling resulted from a small mistake when the Coffey still broke, leading to unusually high levels of congeners in the whisky in relation to the aroma molecules that failed to comply with the standards of the distillery where it was produced, the Antigua distillery. This is how, in 2017, Luca Gargano, one of the greatest spirits collectors and men in the world of rum, happened upon and recovered the 27 casks in which the mistake was made during a trip to the Caribbean, much to our delight (and the delight of our taste buds).
The result? This rum bottled at 66% ABV is an utterly pure and unadulterated product, a concentrated and delicious molasses rum. The nose is intense and rich, with notes of vanilla and tobacco, a handful of dried fruits, and pepper. On the palate, the power will astonish you, revealing some citrus fruits, chocolate and vanilla. The finish is incredibly long, staying peacefully on spices.
Why not soften the power of this rum with a the freshness of a lime sorbet? You could also pair it with seafood such as scallops.
