Les Trouillots is a Côtes du Jura produced from 35-year-old Poulsard vines?–?a variety typical of the Jura region?–?planted on the Triassic marl terroir of Les Trouillots. The estate has a yield of 45 hl/ha and is in the process of converting to organic farming. Manual harvesting is followed by de-stemming and a 15-day maceration. The alcoholic and malolactic fermentations, along with ageing, are conducted in stainless steel vats. The wine is not filtered and there are no added sulphites.
This Poulsard offers delightful aromas of red fruit on the nose. Fresh and lively on the palate, it reveals a thirst-quenching quality and a long finish. We recommend decanting lightly after uncorking the bottle to allow the wine to open out and breathe.
It is an excellent aperitif and pairs well with local charcuterie and dishes cooked in sauce.
