Distillerie Castan
The story of the distillery started in 1941, back when Gilbert and his son Jacques, itinerant distillers, toured the Tarn region with their pot still. Sébastien Castan, third-generation member of the family, decided to establish a fruit and whisky distillery with his wife Céline in 2007. Grandson of the late Gilbert, he owned a considerable acreage around the distillery where he grew his own cereal crops. The couple distilled their first whisky together in 2010, before bottling it in 2013. In 2019, major renovation and modernisation works were undertaken, including the extension of the distillation room and the construction of a second ageing cellar. The distillery is unique in that it has a hand in every stage of the whisky-making process. From growing and harvesting the cereals, to fermentation, distillation, ageing and, of course, bottling, everything is performed and monitored with the greatest care at the Castan distillery.
