The vines grow on steep slopes of blue and black marl, where the dramatic gradients make mechanisation impossible and demand considerable manual labour. In the vineyard, no insecticides or anti-rot treatments are used to respect the land. After fermentation, the wines are aged in oak casks, most not completely filled, so that a natural veil of yeast develops on the surface.
