The Azienda Sorelle Palazzi in the heart of Tuscany is run by Guido Beltrami, the nephew of Paolo and Donatella Palazzi, the sisters who own the estate. He manages their 10-hectare vineyard of indigenous grape varieties which are organically cultivated. The domaine has rapidly established a fine reputation for its sweet Vino Santo wines. These are produced using a technique known as raisining, in which grapes are left to dry on laths.
