Founded in the mid-19th century, Maison Simonnet-Febvre ranks among the oldest houses in Chablis. The energy and enthusiasm surrounding what is now owned by Maison Louis Latour are reasons enough to keep a close eye on this address.

Maison Simonnet-Febvre is one of the oldest wineries in Chablis. Established in 1840, it owns several parcels of Grand Cru and Premier Cru. In 2003, it was taken over by the legendary Burgundy négociant Louis Latour and has been under the stewardship of Paul Espitalié since 2019. It also holds the unique distinction of being the only producer in the Chablis appellation to craft Crémant de Bourgogne.
In addition to its wine trading business, Simonnet-Febvre owns 15 hectares in the heart of a little-known appellation called Les Coteaux de l’Auxois. This land, once prized in Versailles, is currently undergoing a renaissance. The vineyards are currently being converted to organic farming. The estate distinguishes itself with a diverse range of wines, producing 6 of the 17 Chablis Premier Crus. These include Chablis Grand Cru, Chablis, Petit Chablis, Crémant de Bourgogne, Grand Auxerrois and Coteaux de l’Auxois. Today, many of the wines produced by Maison Simonnet-Febvre are certified organic?–?a major step forward for this historic estate.
