Domaine des Rois Mages was created by Burgundian Anne-Sophie Debavelaere in 1984, starting with an estate in Rully in the Côte Chalonnaise. She has since expanded into Bouzeron and Beaune. The domain now grows 10 hectares of Chardonnay, Pinot Noir and Aligoté with integrated farming. After harvest, the grapes are meticulously sorted pressed and vinified in either oak barrels or stainless-steel vats. The wines are matured in oak barrels.
This highly unconventional white Rully is the brainchild of Anne-Sophie Debavelaere and her son Félix Debavelaere, a trained oenologist. This single-varietal Chardonnay successfully combines vibrant liveliness with delightful fruity notes. On the palate, it reveals exceptional tension, fullness and superb length. The aromatic intensity perfectly suits richly flavoured dishes. In fact, Anne-Sophie recommends serving it with strong, soft cheeses, or even an onion tart.
The mineral character of the Les Cailloux cuvée springs from the stony soil where it originates. In this terroir, the Chardonnay vines have to dig their roots very deep into the soil to find the nutrients they require to flourish. Vinification and ageing are performed in oak casks on fine lees, which gives the wine a unique generosity. In the glass, this wine which falls under the Rully village appellation delivers delicious notes of dried fruits, nuts (almond, hazelnut), white flowers, acacia and vanilla. Full and exceptionally long on the palate, this elegant wine comes into its own with refined dishes of fish or white meat.
