Domaine Jean-Paul and Benoît Droin is owned by one of the oldest families in Chablis, who have been working the vines for nearly five centuries. In 1547, Jehan Droin was already cultivating an enclosed vineyard. Today, the domaine is managed by Jean-Paul Droin and his son Benoît; it covers 26 hectares, including 5 grand crus and 8 premier crus. It has risen to the top of Chablis, offering precise, generous wines with a fine mineral persistence.
To create this premier cru Chablis, the domain prioritised fermentation in vats and barrels (with indigenous yeasts) as well as malolactic fermentation. Its clay soil origins have given it a generous profile. The nose reveals notes of hawthorn and yellow stone fruits. The salty finish gives it lovely length and allows for pleasing pairings with seafood dishes.
