Now managed by Christophe Cordier, the eponymous family domain crafts a Saint-Véran, le Clos, from single-parcel selection. It is clear that this producer is committed to promoting the special features of each of his terroirs. To do this, his Chardonnay plants are grown thoroughly with severe pruning, ploughing, and the use of compost. In the winery, the varietal and its terroir are kept at the forefront of proceedings. The vinification is led by wild yeasts, the temperature is controlled during fermentation, and the wine is matured at length in wooden containers, on fine lees. This is a cuvée to enjoy in its youth. Pale gold in colour, it gives off intense notes of white fruit, white flowers, exotic fruit, citrus, and nuts. Its balance of minerality and silkiness invites pairings with dishes involving creamy sauce.
