The son of wine merchants, Dominique Gruhier launched into the challenge of starting a domain with his father in the 90s. They immediately fell for the charm of their current property in Epineuil. Since 2003 they have been cultivating their vines organically, with manual harvests and a careful sorting process in the winery. The vinifications involve as little intervention as possible, and there are no additives apart from a small amount of sulphur just before bottling. Dominique Gruhier adapts his methods to each vintage, aiming only to produce enjoyable wines with great flavour. On the nose, there is a surprising burst of salty and floral notes. The palate is lively with a citrus side to it, making way for an almost spicy finish. The wine will gain in subtlety after a few years of ageing, so you can keep it for around 4-5 years.
