Head towards the famous Savennières appellation, where Château de Plaisance owns about three hectares of vines planted on schist soils, with this 100% Chenin. These vines, averaging 35 years old, are pruned using the Guyot-Poussard method and are cultivated according to organic and biodynamic principles, true to the estate’s philosophy. A reforestation programme is currently underway around the vines, as well as a reintroduction of biodiversity.
After harvesting the grapes by hand, the small crates are taken to the winery for slow and cold pressing. This is followed by a fermentation started solely by indigenous yeasts. Then, the wines are aged for 12 months in barrels, and partial malolactic fermentation is carried out.
Upon tasting, the wine is both powerful and sharp. The colour is a lovely yellow with golden reflections, while the palate is mineral and intense. We advise you to pair this wine with grilled shellfish or goats’ cheese.
