The white Sancerre produced by Domaine Denizot consists of Sauvignon Blanc from different terroirs planted with a density of 7,500 vines per hectare. An environmentally friendly approach to viticulture ensures that the quintessential qualities of the caillotes terroir – limestone typical of the appellation – are captured in each bottle. This includes pruning using the Guyot method, which respects the flow of sap, working the soil by hoeing and ploughing, and avoiding the use of insecticides, acaricides and weedkillers.
The hand-picked grapes are subjected to an equally meticulous vinification process, which is extremely gentle. The grapes undergo a prolonged pressing in a pneumatic press, the juice is handled by gravity, fermentation is completed in inert stainless steel and concrete containers, and the wine is bottled after a year’s maturing.
On tasting, the wine reveals intensity and density combined with a fine tension. The fruit is present yet delicate.
