In Ladoix-Serrigny, domain Edmond Cornu null cultivate around 15 hectares of Pinot Noir, Chardonnay and Aligoté. Today, Pierre Cornu manages the domain, with the advice of his father and help from his cousin Emmanuel Boireau. Together, they cultivate vines using sustainable methods and favour gentle vinifications, producing refined, elegant wines which are as good today as they are after a few years of aging.
The Edmond Cornu et Fils estate, a family property situated in the northern part of the Côte de Beaune, consists of just over 15 hectares of vines in fine appellations such as Aloxe-Corton, from which it crafts a fine wine. The Pinot Noir grapes used to produce this cuvée were meticulously nurtured following sustainable methods certified by the French ‘Agriculture Raisonnée’ label in 2007, in the Les Valozières Premier Cru vineyard. With an oceanic climate and semi-continental influences, the Pinot Noir vines have drawn all the nutrients they required to thrive from a hillside with an ideal exposure to the south and south-east, and a soil mainly consisting of clay. In the winery, the work is meticulous and respectful of the raw material. The winemaking process involves low-intervention, minimum inputs and allows the terroir to shine. The wine ages in casks, with only 20% new wood, for a year and a half. Powerful in its youth, this wine will benefit from a decade or so in the cellar to express the finesse of its tannins.
