Created during the 1980s in Pommard, Domaine Jean-Marc Boillot crafts this Puligny-Montrachet in the La Garenne Premier Cru, from the eponymous ‘climat’ found above the famous Folatières vineyard. The Chardonnay grapes which make up this vineyard are grown with care and draw their nutrients from fine soils of clay and limestone.
Harvested by hand, the Chardonnay grapes are meticulously sorted before vinification, which is characterised by gentle pneumatic pressing of whole bunches. Casked in oak barrels, the must undergoes both alcoholic and malolactic fermentation. The wine is then aged for just under a year in oak barrels with a maximum of 30% new wood. In order to develop texture, the wine is subject to weekly stirring of the lees. Made for decades of cellaring, it has a pale yellow colour and a bouquet that balances savoury notes developed during ageing - dried fruit, freshly baked goods, fresh butter - with notes of white fruit, citrus and flowers.
