At the heart of the Côte de Beaune we find Domaine Violot-Guillemard, founded in 1980 and now extending over eight hectares of old vines. The estate crafts this Pommard made from Les Rugiens Premier Cru. The Pinot Noir vines which make up the vineyard are around 65 years old and cover a total area of 45 ares. Environmentally-friendly cultivation encourages the vines to draw their nutrients from clay-rich soils. In the cellar, after premature harvest, which counters the effects of global warming, the grapes go through pre-fermentation cold maceration for just under a week. The must is then put into wooden barrels for ten days. The wine is aged in the barrels, 50% of which are new, for between 14 and 18 months.
Tasting presents a powerful and strong profile with an excellent cellaring potential and the possibility to be paired with hearty dishes.
