At the heart of the Côte de Beaune we find Domaine Violot-Guillemard, founded in 1980 and now extending over eight hectares of old vines. The estate crafts this red Beaune from Pinot Noir grapes grown within the renowned Clos des Mouches Premier Cru. The vines are around 65 years old and are spread over 30 ares, benefitting from ideal exposure towards the south-east. In the cellar, after premature harvest which counters the effects of global warming, the grapes go through pre-fermentation cold maceration for just under a week. The must is then put into wooden barrels for ten days. The wine is aged in barrels, 50% of which are new, for between 14 and 18 months.
Tasting presents a relatively supple and silky wine, persistent on the fine and velvety tannins.
