The origins of the Domaine Sylvain Cathiard et Fils date back to the 1920s when Alfred Cathiard began to acquire the first parcels of vines in Vosne. The wine heritage of the family is very prestigious with very fine plots of Nuits-Saint-Georges, Vosne-Romanée, Chambolle-Musigny and Romanée-St-Vivant. The domaine is now managed by Sylvain Cathiard and his son Sébastien. Their wines are of a very high quality and are almost impossible to find in France. They are characterised in particular by their great finesse and their harmony.
The estate traces its origins back to the inter-war years and is now run by Sylvain Cathiard and his son Sébastien. Both cultivate fine parcels in the Côte de Nuits and introduce us to their work with this red Hautes-Côtes-de-Beaune called Aux Chaumes, a cuvée released in the 2019 vintage. The Pinot Noir vines benefit from an oceanic climate with semi-continental influences, and draw the nutrients they require to thrive from soils consisting of marl and limestone. Once the grapes have been harvested, they undergo a meticulous vinification process that involves removing all stalks from the berries before fermentation and maceration, which last three weeks to a month. The wine is then left to age for a year and a half in oak casks, with 20 to 25% new wood. The wine is bottled without prior fining or filtration.
One would expect this wine to be juicy and full-bodied. However, the ageing and long maceration have imparted great depth and a fine yet round texture.
