Loreline Laborde, who runs this estate in the Jura region, honours Savagnin, the region’s flagship grape variety, with this topped-up white Côtes-du-Jura. The vines are encouraged to draw the nutrients they require to flourish from a variety of soils, through organic cultivation methods that require the help of a mare and encourage the microbial life of the soil, in particular the application of compost. Yields are controlled to ensure quality, maturity and concentration.
In the winery, the same philosophy of respect for the raw material and the identity of the terroir is maintained. In fact, the meticulous vinification process is designed to be as low-interventionist as possible, with native yeasts triggering fermentation and the wine used as a stabiliser and antioxidant.
In the glass, the wine reveals a pale yellow colour with hints of gold. It releases floral notes combined with white fruit, almond and fresh walnut. The palate is dense yet enlivened by a striking natural acidity.
