Domaine Poisot Père et Fils presents us with a wine fashioned from one of the finest crus of the Côte de Nuits and Burgundy. Around 35 years old, the Pinot Noir vines have been stimulated to extract the necessary nutrients to flourish from deep brown soils consisting of limestone and clay, with an eastward exposure – perfect for optimal ripening. The estate practises integrated winegrowing methods, which include ploughing between the rows and manual leaf removal on the side facing the morning sun. The bunches are hand-picked and carefully sorted before vinification, which involves complete destemming, a two- to three-week maceration and alcoholic fermentation with punching down of the cap and pumping over to extract body and flavour. The wine is then left to age for around 18 months in casks with between 30 and 50% new wood.
Designed for ageing - up to 30 years in the best vintages! - this wine displays a dense, dark colour revealing notes of red and black berries, violet, sweet spices, leather and humus. Silky yet powerful tannins impart structure to the wine.
